Juicy lamb patties topped with feta, salad and creamy tzatziki mimic the big, bold flavours of an authentic Greek gyro sandwich but in burger form.
LAMB BURGERS WITH GREEK SALAD & TZATZIKI
Prep: 15 minutes | Cook: 4-6 minutes | Serves 4
Juicy lamb patties topped with feta, salad and creamy tzatziki mimic the big, bold flavours of an authentic Greek gyro sandwich but in burger form.
Ingredients
Tzatziki
½ telegraph cucumber, coarsely grated
1 cup greek-style yoghurt
1 clove garlic, crushed
1 tbsp fresh mint, finely chopped
1 tbsp fresh dill, finely chopped
Lamb burgers
400g lamb mince
½ small red onion, finely chopped
2 cloves garlic, crushed
1 tbsp fresh oregano, finely chopped
1 tbsp fresh dill, finely chopped
2 tbsp fresh mint, finely chopped
Finely grated zest and juice of ½ lemon
4 hamburger buns, halved and toasted
Greek salad
4 cos lettuce leaves
100g feta cheese, thinly sliced
4 small tomatoes, sliced
½ telegraph cucumber, sliced
Method
Tzatziki: Squeeze as much liquid from the cucumber as possible then add to a bowl with the yoghurt, garlic, mint and dill. Season with salt and pepper and keep chilled.
Lamb burgers: In a large bowl, combine the lamb, onion, garlic, herbs, lemon zest and juice. Season well with salt and pepper. Use your hands to mix together well and form into 4 equal-sized, round flat patties.
Grill or panfry the burger patties for 3-4 minutes on the first side and 1-2 minutes on the second side for medium-rare, or longer as preferred. Remove the burgers to a plate to rest for a few minutes before serving on buns piled up with salad ingredients and dollops of tzatziki.
